A hearty soup is made with flat rice noodles, Pho Bo soup is very popular throughout Vietnam. Serves 4 to to 6.

Preparation time: 15 minutes
Cooking time: 45 minutes
Ingredients:
Broth:
1 small onion, chopped
1 2 inch stick of ginger
2 pounds beef bones
12 cups water
6 star anise
1 teaspoon salt
1 teaspoon sugar
£ 1 offers lean beef
Noodles:
1 package 16 ounces dried flat rice noodles (PHO)
Dressing:
3 spring onions, chopped
1 large onion, chopped
10 branches of fresh cilantro, finely chopped
1 cup bean sprouts
10 sprigs basil
10 branches of fresh cilantro (NGOs Gay)
Red or green bell peppers, cut into thin slices
Accompaniments
Lime or lemon l
Fish sauce
hoisin sauce
Hot Chili Sauce
Preparation:
Fry onions and ginger until they are burned. With the back of a knife, break the ginger and set aside.
Wash beef bones, they are in a large pot andWater to cover up. Bring to a boil and immediately pour this "first boiling" water and discard. Add another 12 cups of cold water and bring again to boil. Remove the foam. Add sauteed onions and ginger, star anise, salt and sugar. In medium-low and cook for 30 minutes. Cut raw meat cut into thin strips and reserve.
Remove the bones from the broth and strain the vegetables and spices. Soak noodles in cold water for 10 minutes. Drainage. In a saucepan, bring two quarts of cold water to a boil. Add drained noodles and cook seven minutes to cook, stirring, until noodles are soft.
Rinse noodles under cold water and set aside.
Return the broth to a boil over high heat.
Serves To serve: Divide noodles among 4 to 6 large individual plates. Put raw meat into thin slices, scallions, onions and cilantro on top. Pour boiling hot broth, cover the noodles and serve immediately with. The boiling broth cook the thin slices of beef. The phone is always accompanied by bean sprouts, basil, coriander and pepper. Servewith lime and lemon slices, fish sauce, hoisin sauce and hot chili sauce. Serves 4 to to 6.
